Ingredients
Slaw:
- 4 tablespoon apple cider vinegar
- 1 teaspoon chili sauce
- 1 tablespoon soy sauce
- 2 teaspoon agave
- 1 teaspoon sesame oil
- Freshly ground pepper
- 1 ½ cup shredded cabbage
- 1 cup shredded carrots
- 2 green onions sliced
- 1-2 tablespoons chopped cilantro to taste
Taco filling:
- 1 tablespoon olive oil
- ½ red onion sliced
- 1 package Upton’s Naturals Bar-B-Que Jackfruit
And:
- Corn or flour tortillas
Instructions
- Combine the vinegar, chili sauce, soy sauce, agave, and sesame oil in a large mixing bowl. Taste and adjust flavors, and add freshly ground pepper to taste. Mix in the cabbage, carrots, green onions, and cilantro. Chill in the refrigerator while completing the next steps.
- Heat the olive oil in a saucepan over medium high heat. Sauté the onions for 3-4 minutes, then add the jackfruit. Continue to cook until the jackfruit is heated through, breaking up the larger pieces.
- To assemble tacos, add 2-3 tablespoons of jackfruit to a tortilla, and top with slaw. Serve with hot sauce and additional barbecue sauce, if desired.
