Bar-B-Que Jackfruit Totchos
As a snack or an app, these smothered tater tots are easy to make and fun to eat. Use any flavor of jackfruit, or try it with Chorizo Seitan.
Ingredients
- 1 32-oz bag tater tots
- 1 package Upton’s Naturals Bar-B-Que Jackfruit
- 1 & 1/2-2 cups vegan cheese or queso
- 2 cups chopped lettuce
- 2 cups pico de gallo
- 1 cup guacamole and/or 2-3 avocados sliced
- 1/2-1 cup pickled jalapeños
- 1 cup chopped cilantro
- 1/3-1/2 cup vegan sour cream
- Extra pico de gallo and guacamole optional
Instructions
- Preheat oven to 450°F.
- Place the tater tots on a deep baking sheet or large casserole dish and bake according to package directions. Remove from the oven, but keep the oven turned on.
- Break up the big pieces of jackfruit in the bag, then spread evenly over the tater tots. Sprinkle the cheese over the jackfruit and tater tots. Bake until the jackfruit is heated thoroughly and the cheese melts, about 10 minutes.
- You can either add all of the toppings to the tater tots while in the baking dish, or divide the tater tots onto 4 plates and top each one individually. Start by sprinkling the lettuce over the tater tots, then add spoonfuls of pico de gallo. Add the guacamole and/or sliced avocados, jalapeños, and cilantro, then drizzle or dollop the vegan sour cream.
- Serve immediately with sides of pico de gallo and guacamole, if desired.
