Scatter potato pieces on a prepared baking sheet, drizzle with 1 tablespoon olive oil, and sprinkle with salt and pepper. Bake for 25-30 minutes, or until crispy and tender. Set aside.
While the potatoes are roasting, heat the other tablespoon of olive oil in a saucepan. Sauté the onions until golden, 6-7 minutes. Stir in the jackfruit and kale, breaking up the large pieces of jackfruit. Remove from heat and add salt and pepper to taste.
Heat the mac ‘n’ cheese and beans in separate bowls.
Heat the tortillas in a large skillet. To make a burrito, start by spooning 1/2 cup mac ‘n’ cheese (as if you are using rice) onto the burrito. Fill the tortilla with 1/4 of each the roasted potatoes, jackfruit mixture, beans, cornbread, and cheese. Repeat to make 3 more burritos.
Serve with chips and salsa.
