Faux Tuna Jackfruit and Chickpea Salad
This easy faux tuna salad comes together in just a few minutes, and is a great make-ahead meal to have on hand. Pile it high on a sandwich, eat it with crackers, or scoop it onto your favorite mixed green salad.

or Lightly Seasoned Shredded Jackfruit

chickpeas
drained and rinsed

cup
vegan mayonaise

ribs
celery
diced

red onion
diced
cayenne pepper
optional, to taste

dulse granules
or kelp flakes
salt & pepper
to taste
Instructions
Place the Jackfruit, Old Bay, 1/2 the lemon juice, chickpeas, and mayo in a food processor. Pulse 5-8 times to combine.
Scrape down the sides of the bowl and add dulse granules, salt, pepper, and a bit more mayo if needed. Pulse to combine.
Taste, and add more salt, pepper, lemon juice, or seasoning if needed.
Add the red onion and celery and pulse to incorporate.
Refrigerate until ready to serve. Make a sandwich with jackfruit salad, tomato, and lettuce, or eat prepared salad with crackers.
