Instructions
Mash up the Jackfruit while still inside the package until it has a shredded texture. Open the package into a medium saucepan and heat over medium heat. Add the Jackfruit, tomato puree, water, oil, nutritional yeast, Bragg Liquid Aminos, maple syrup, onion powder, liquid smoke, paprika and salt. Cook 8-10 minutes until heated through and starting to caramelize. Set aside and prepare the rest of the salad.
Place the kale in a large bowl and sprinkle with sea salt, then drizzle in the olive oil. Massage the kale until tender, adding more salt or oil if needed to break down the fibrous greens.
Add the red bell pepper, tomato, onion, grated carrot, prepared Jackfruit and pumpkin seeds.
Mix together all of the dressing ingredients, then taste and adjust seasonings if necessary. Dress the salad and serve immediately.
