Bar-B-Que Jackfruit and Mac N’ Cheese Burritos
Why choose between two favorites when you can have it all? Tangy Bar-B-Que Jackfruit and creamy Ch'eesy Mac combine for the ultimate burrito.
Ingredients
- 1 large potato cubed
- 2 tablespoons olive oil
- Salt and pepper
- ½ small onion diced
- 1 10.6 oz package Upton’s Bar-B-Que Jackfruit
- ½ bunch kale chopped into bite-size pieces
- 2 cups prepared Original Ch’eesy Mac
- 1 15-oz can black or pinto beans
- 1 cup cornbread cubes
- 4 large flour tortillas
- 1 cup shredded vegan cheddar cheese
Optional additions:
- Sliced jalapeños
- Coleslaw
- Barbecue sauce
Instructions
- Preheat oven to 400°F.
- Scatter potato pieces on a prepared baking sheet, drizzle with 1 tablespoon olive oil, and sprinkle with salt and pepper. Bake for 25-30 minutes, or until crispy and tender. Set aside.
- While the potatoes are roasting, heat the other tablespoon of olive oil in a saucepan. Sauté the onions until golden, 6-7 minutes. Stir in the jackfruit and kale, breaking up the large pieces of jackfruit. Remove from heat and add salt and pepper to taste.
- Heat the mac ‘n’ cheese and beans in separate bowls.
- Heat the tortillas in a large skillet. To make a burrito, start by spooning 1/2 cup mac ‘n’ cheese (as if you are using rice) onto the burrito. Fill the tortilla with 1/4 of each the roasted potatoes, jackfruit mixture, beans, cornbread, and cheese. Repeat to make 3 more burritos.
- Serve with chips and salsa.
