
Cajun Style Banana Blossom Sandwich

Ingredients
- 1 package Upton's Naturals Banana Blossom
Marinade
- 2 tsp lemon juice
- ¼ cup soy sauce
- 1 tbsp olive oil
- 1 tsp nori flakes or blending nori
- ½ tsp thyme leaves
- Salt & Pepper to taste
Wet Batter
- 1 cup flour
- 1 cup soda water or water
- 2 Tbs vegan egg
- 2 tsp Old Bay seasoning
Dry Batter
- ½ cup flour
- ½ cup cornmeal
- 3 tsp Cajun seasoning
- salt and Pepper to taste
Roasted Red Bell Pepper Sauce
- 1 cup vegan mayo
- ¼ cup roasted bell pepper
- 1 tsp lemon juice
- ½ tsp smoked paprika seasoning
- ½ tsp granulated garlic
- salt to taste
Plus
- sandwich bread or buns
- pickles
- chopped lettuce
Instructions
- Marinate Banana Blossom for 3-4 hours. Overnight if possible. The longer, the more flavor, and it breaks down the texture to make it softer.
- Dip Banana Blossom in the dry batter.
- Dip Banana Blossom in the wet batter.
- Fry or air fry until golden brown.
- Mix roasted red bell pepper sauce ingredients in a bowl.
- Build your sandwich and enjoy!
