Faux Tuna Jackfruit and Chickpea Salad
This easy faux tuna salad comes together in just a few minutes, and is a great make-ahead meal to have on hand. Pile it high on a sandwich, eat it with crackers, or scoop it onto your favorite mixed green salad.
Ingredients
- 2 packages Upton's Naturals Original Jackfruit or Lightly Seasoned Shredded Jackfruit
- 1.5 – 2 tsp Old Bay seasoning
- 1 lemon juiced
- 1 (15 oz) can chickpeas drained and rinsed
- ½ cup vegan mayonaise
- 3 ribs celery diced
- 1 red onion diced
- cayenne pepper optional, to taste
- 1-2 tsp dulse granules or kelp flakes
- salt & pepper to taste
Instructions
- Place the Jackfruit, Old Bay, 1/2 the lemon juice, chickpeas, and mayo in a food processor. Pulse 5-8 times to combine.
- Scrape down the sides of the bowl and add dulse granules, salt, pepper, and a bit more mayo if needed. Pulse to combine.
- Taste, and add more salt, pepper, lemon juice, or seasoning if needed.
- Add the red onion and celery and pulse to incorporate.
- Refrigerate until ready to serve. Make a sandwich with jackfruit salad, tomato, and lettuce, or eat prepared salad with crackers.
