Faux Tuna Jackfruit and Chickpea Salad

This easy faux tuna salad comes together in just a few minutes, and is a great make-ahead meal to have on hand. Pile it high on a sandwich, eat it with crackers, or scoop it onto your favorite mixed green salad.

Ingredients
  

  • 2 packages Upton's Naturals Original Jackfruit or Lightly Seasoned Shredded Jackfruit
  • 1.5 – 2 tsp Old Bay seasoning
  • 1 lemon juiced
  • 1 (15 oz) can chickpeas drained and rinsed
  • ½ cup vegan mayonaise
  • 3 ribs celery diced
  • 1 red onion diced
  • cayenne pepper optional, to taste
  • 1-2 tsp dulse granules or kelp flakes
  • salt & pepper to taste

Instructions
 

  • Place the Jackfruit, Old Bay, 1/2 the lemon juice, chickpeas, and mayo in a food processor. Pulse 5-8 times to combine.
  • Scrape down the sides of the bowl and add dulse granules, salt, pepper, and a bit more mayo if needed. Pulse to combine.
  • Taste, and add more salt, pepper, lemon juice, or seasoning if needed.
  • Add the red onion and celery and pulse to incorporate.
  • Refrigerate until ready to serve. Make a sandwich with jackfruit salad, tomato, and lettuce, or eat prepared salad with crackers.
