Contrary to popular belief, this is not a soup served at Italian weddings. In this instance, the “wedding” refers to the “marriage” of flavors – onion, garlic, thyme, and of course all the flavor our Italian Seitan brings to the party. Don’t forget to have a crusty loaf of bread handy, you’ll want to sop up as much of this broth as you can once all the noodles are gone!
