You’ll only need a handful of ingredients, most of which you probably have on hand already, so you can whip up a colorful, delicious, protein-packed meal in just a few minutes any night of the week.
Orange Seitan with Green Beans
With the bright, inviting colors and sprinkling of sesame seeds, this protein-packed vegan entrée looks like it came from a restaurant, but is incredibly simple to make. You can swap in broccoli for the green beans, if you prefer, and add more veggies like red bell pepper for more color.
Ingredients
- 1 cup long-grain white rice
- ½ tsp salt
- Water measurements in cooking instructions
- 2 tsp minced fresh ginger or 1/2 tsp dry ground ginger
- 2 cloves garlic peeled and minced
- ½ cup freshly squeezed orange juice
- Zest from 1 orange
- 1 Tbs rice wine vinegar or dry sherry
- 2 Tbs low sodium soy sauce
- 2 tsp turbinado or brown sugar
- 2 Tbs cornstarch
- 1 Tbs sesame seeds plus more for garnish
- Pinch of salt
- Pinch of red pepper flakes optional
- 2 tsp vegetable oil
- Orange slices for garnish optional
- 1 8 oz package of Upton’s Naturals Traditional Seitan sliced into ¼’ thick pieces
- 6 oz green beans
Instructions
- Cook rice in a rice cooker, or, boil 1 ½ cups of water in a medium sauce pan. Stir in the rice and salt, and return to a
- boil.
- Reduce heat to simmer, cover, and cook the rice 16-18 minutes. When the rice is cooked, it will be tender and the water will be absorbed.
- Cover and allow to steam off heat for 10 minutes. Fluff with a fork before serving.
- Place the ginger, garlic, orange juice, orange zest, rice vinegar, soy sauce and sugar in a small bowl. Use a fork to whisk until the sugar is dissolved.
- In a large bowl, combine the cornstarch, sesame seeds and 1 Tbs water. Add a pinch of salt, and red pepper flakes (or black pepper).
- Add the Seitan slices to the bowl and toss to coat, adding more water if needed.
- Add the oil to a large nonstick pan over medium-high heat. Add the Seitan and cook, turning frequently, until crispy, 4-5 minutes.
- Add ¼ cup water to that same pan, along with the green beans. Cook 2-3 minutes until tender, but still crisp.
- Add the orange sauce to the skillet and cook until thickened, 2-3 minutes.
- Divide the rice between plates and top with green beans and Seitan mixture. Sprinkle with sesame seeds and garnish with orange slices.
