Roasted Garlic Plantain Burger
Add a little excitement to your next burger night with plantain "buns" and smoky, savory Bacon Seitan.
Ingredients
- 1 large green unripe plantain
- 2-3 tablespoons olive oil divided
- ½ small onion sliced into rings
- 4 strips Upton’s Naturals Bacon Seitan
- 2 vegan burger patties
- ½ cup vegan mozzarella cheese
- 2 cloves roasted garlic smashed
- 2 tablespoons vegan mayonnaise
- 2 leaves lettuce
- 2 slices tomato
- ½ avocado sliced
- ¼ cup coarsely chopped fresh cilantro
Instructions
- Evenly slice the plantain in half lengthwise, and then slice in half widthwise.
- Heat 1 tablespoon of the olive oil in a large skillet, cast iron if possible. Pan fry the plantain slices, 2-4 pieces at a time depending on the size of your skillet, 2-3 minutes on each side. Remove from pan and set aside.
- Smash each plantain between the underside of two flat plates to make each slice of “bread” for your sandwiches, which are essentially large tostones. Pan fry the smashed plantains again, adding another tablespoon of oil if necessary, 2-3 minutes on each side or until golden. Remove from pan.
- In the same skillet, sauté the onions for 5 minutes until golden. Set aside.
- Heat the remaining tablespoon of olive oil in the skillet, and pan fry the Bacon Seitan, 1-2 minutes on each side.
- Move the bacon to the side of the pan, then pan fry the burgers according to package directions. Flip, add 2 pieces of Seitan Bacon to each burger, then sprinkle the cheese evenly atop each burger. Cook for 3-4 minutes, placing a lid over your pan if your cheese needs help melting.
- Meanwhile, mix together the roasted garlic and the mayonnaise to make garlic mayo.
- To assemble, spread half of the garlic mayo on each piece of plantain. Add the lettuce, tomato, and avocado to each bottom piece, then place the burgers on top. Add the sauteed onion slices and cilantro, then top with the other pieces of plantain.
