Sweet and Smoky Ginger Sesame Jackfruit Kale Salad
With plenty of sweet, savory, and smoky flavors throughout, this Jackfruit kale salad will be your go-to for greens.
Ingredients
For the Sweet and Smoky Jackfruit:
- 1 package Upton’s Naturals Original Jackfruit or 1 package of Lightly Seasoned Shredded Jackfruit
- ½ cup tomato puree
- ¼ cup water
- 1 Tbs olive oil
- 1 Tbs nutritional yeast
- 1 Tbs Bragg Liquid Aminos or soy sauce
- 1 Tbs maple syrup
- 1 tsp onion powder
- 1 tsp hickory liquid smoke
- 1 tsp smoked paprika
- ½ tsp salt
For the salad:
- 1 bunch kale washed and chopped into small pieces
- Sprinkle of sea salt
- 2 tsps olive oil
- 1 red bell pepper sliced
- 1 medium tomato chopped
- ½ small onion sliced
- 1 large carrot grated
- ⅓ cup toasted pumpkin seeds
For the Dressing:
- 2 tsps freshly grated ginger
- 1 Tbs sesame oil
- 1 Tbs maple syrup or agave nectar
- 3-4 tsp apple cider vinegar
- Freshly ground black pepper
- 1 Tbs soy sauce
- 3 Tbs water
Instructions
- Mash up the Jackfruit while still inside the package until it has a shredded texture. Open the package into a medium saucepan and heat over medium heat. Add the Jackfruit, tomato puree, water, oil, nutritional yeast, Bragg Liquid Aminos, maple syrup, onion powder, liquid smoke, paprika and salt. Cook 8-10 minutes until heated through and starting to caramelize. Set aside and prepare the rest of the salad.
- Place the kale in a large bowl and sprinkle with sea salt, then drizzle in the olive oil. Massage the kale until tender, adding more salt or oil if needed to break down the fibrous greens.
- Add the red bell pepper, tomato, onion, grated carrot, prepared Jackfruit and pumpkin seeds.
- Mix together all of the dressing ingredients, then taste and adjust seasonings if necessary. Dress the salad and serve immediately.
