Vegan Bacon Cheeseburger Nachos
Like a veggie burger, but better because it's nachos! Bacon Seitan is the star of the show in this easy snack recipe.
Ingredients
Nachos:
- ½ bag tortilla chips
- 2 vegan burger patties
- 6-8 strips Upton’s Naturals Bacon Seitan
- 1 cup vegan cheddar cheese shreds or cheese sauce
Toppings:
- ½ medium onion diced
- 1 medium tomato diced
- ½ cup pickle slices
- 3 tablespoons vegan mayonnaise
- 1 tablespoon ketchup
- Shredded romaine lettuce
- Yellow mustard
- Ketchup
Instructions
- Pan fry the burgers and Bacon Seitan according to package directions.
- If cooking in oven, preheat oven to 400°F. Scatter the tortilla chips out on a baking sheet. Chop the cooked burgers into 1/2-inch pieces and evenly place on the tortilla chips. Sprinkle with cheese, then bake until the burgers are heated thoroughly and the cheese melts, 7-10 minutes. Remove from oven, and either keep on the tray or divide on to 2 plates.
- If cooking in microwave, divide the tortilla chips between two microwave-safe plates. Chop the burgers into 1/2-inch pieces and evenly divide between the two plates, atop the tortilla chips. Sprinkle each plate with half of the cheese, then microwave each plate until the burgers are heated thoroughly and the cheese melts, 2-3 minutes. Remove from microwave.
- Top the nachos with the diced onion, tomato, and pickle slices. Mix together 3 Tbs mayo and 1 Tbs ketcup and drizzle on top. Then add desired amount of lettuce, mustard, and ketchup, serve immediately.
