Ingredients
For the Chicken Style Seitan:
- ½ cup soy milk
- 1 ½ teaspoons apple cider vinegar
- Canola oil
- 1 cup all-purpose flour
- 1 tablespoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- ½ teaspoon dried thyme
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1 8 oz package Upton’s Naturals Traditional Seitan
For the Protein Waffles:
- 2 cups whole wheat flour
- 2 scoops (60 g) vanilla or unflavored plant-based protein powder
- 2 tablespoons cornstarch
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 2 cups unsweetened soy milk
- 1 tablespoon vanilla extract
- 2 tablespoons maple syrup or sweetener of choice
- 2 tablespoons canola oil
Instructions
Make the Chicken Style Seitan
- Combine the milk and vinegar in a small bowl and let sit for 5 minutes until thickened.
- Fill a wok or sauce pot 3 inches deep with canola oil, heat to 350° when tested with candy thermometer or until the handle of a wooden spoon bubbles when inserted.
- In a shallow bowl, combine the flour, paprika, sea salt, oregano, parsley, thyme, onion powder, garlic powder, and pepper. Whisk together until well combined.
- Coat the pieces of seitan in the flour mixture, then coat with the milk mixture and then dredge through the flour mixture a second time until well coated on all sides. Set aside and continue with seitan until all are coated with flour mixture.
- Transfer pieces of seitan to oil gently, frying 4-6 pieces at a time for 2 minutes until brown and crispy. Remove from oil and transfer to a paper towel-lined plate and repeat until all seitan is fried.
- Place in the oven at 200° to keep warm while you make the waffles.
Make the Protein Waffles
- In a large bowl, combine whole wheat flour, protein powder, cornstarch, baking powder, and cinnamon.
- Stir in plant milk, vanilla, maple syrup, and oil. Whisk until smooth. The batter should be thick but pourable; add a splash of milk if too thick.
- Preheat and lightly grease your waffle iron. Pour in the batter and cook according to manufacturer’s instructions until golden and crisp. Serve warm with fresh berries, nut butter, or a drizzle of maple syrup.
- Top fresh waffles with hot chicken style seitan and serve with butter and maple syrup.
