Chick & Noodle Soup
In 2020 we hit grocery store shelves with what we believe to be the best tasting canned soup ever! After lots of ups and downs, we made the tough decision to discontinue our line of soups, but the recipes live on here on our website and hopefully in your hearts and kitchen. Please enjoy our best-selling Chick & Noodle Soup just as we originally made it in our Chicago test kitchen.
Ingredients
- 1 Tbs olive oil
- 72 oz vegetable broth
- 1 cup carrots diced or rounds
- ½ cup chopped celery
- ½ cup chopped white onion
- 3 cloves garlic minced
- 1 bay leaf
- ½ tsp dry thyme
- ½ tsp dry rosemary
- 1 cup fusilli pasta or pasta shape of choice
- 8 oz Upton's Naturals Traditional Seitan chopped
- 2 tsp Nutritional yeast
- Salt & pepper
Instructions
- Heat oil over medium flame. Add carrots, onion, celery & garlic and sauté until softened, about 3 minutes.
- Add the bay leaf & dry herbs and sauté one more minute.
- Add vegetable broth and bring to a boil.
- Add pasta and cook according to package directions.
- Turn off heat. Add seitan and nutritional yeast. remove bay leaf. Season to taste.
