Fill 4 oven-safe dishes with tortilla chips. Divide the jackfruit and black beans between the 4 dishes and spoon over the chips. Sprinkle each plate of nachos with 1/4 of the cheese. Bake 8-10 minutes, or until the jackfruit is heated through and the cheese melts.
Top each plate of nachos with guacamole and pico de gallo or salsa, then garnish with fresh cilantro and jalapeño slices.
