This warm and cozy one-pot meal comes together in just a few minutes, but tastes like you were in the kitchen all day. Chock full of pasta, Italian Seitan, and veggies it's a hearty lunch or dinner your whole family will love.
Heat the oil over medium heat in a large skillet fitted with a lid. Add the onion and seitan crumbles and sauté for 3 minutes until the onions are translucent. Add the garlic, oregano, basil, chili powder, and paprika, Mix to combine, and sauté for one additional minute until fragrant. Add a splash of vegetable broth or water and deglaze the pan at this point, if needed.
Add the pasta, vegetable broth, and milk. Cover and bring to a boil. Reduce to a low bubble and let cook for 8 minutes or until the pasta is al dente, according to package directions. Remove the lid and add the tomato paste, cheddar shreds, nutritional yeast, salt, and pepper. Stir slowly until all the cheese has melted into the liquid to create a creamy, thick sauce.
Add more salt and pepper to taste if desired.
Portion into serving bowls and garnish with vegan parmesan, parsley, and crushed red pepper if desired.
