1 (14.5 ounce)can sliced carrots, drained and rinsed
½cupraw cashews
½teaspoongarlic powder
½teaspoononion powder
½teaspoonsea salt
1teaspoonlemon juice
¾cupwater
Instructions
Heat 1 tablespoon of olive in a large skillet over medium-high heat. Add the seitan and mushrooms and sauté for 4-6 minutes until the mushrooms have reduced by half in size. Add the green pepper and onion to the skillet with the remaining tablespoon of olive oil. Sauté for 4-6 minutes until the peppers and onion have softened and the onion is translucent.
Add the soy sauce, pepper, and salt and toss to combine and cook for 2 minutes to caramelize the soy sauce. Set aside.
Add the carrots, cashews, garlic powder, onion powder, salt, lemon juice, and water to a blender and blend until smooth and creamy.
Fill hoagie rolls with seitan filling and top with cheese sauce.
