Have you heard the great news? Three of our Seitan flavors are now available in Canada. We're celebrating by recreating this Canadian dish with a vegan twist.
Add the soy milk, tapioca starch, coconut oil, vinegar, nutritional yeast, miso, and salt to a blender and blend until smooth. Pour into a saucepan and cook over medium heat, stirring constantly, until thickened and stretchy like cheese curds, about 4-6 minutes . Remove from heat.
Heat olive oil in a skillet over medium heat. Add onion and cook until soft and translucent. Stir in garlic and cook one additional minute, until fragrant. Add Seitan and cook until heated through. Add the flour and toss with everything until ingredients are coated with flour, cook one minute. Add chili powder, cumin, and oregano. Slowly whisk in vegetable broth and simmer until thickened, about 10 minutes.
Prepare frozen French fries according to package instructions. Top with gravy and cheese curds. Garnish with scallions and freshly cracked black pepper, if desired.
