Philly Seitan Cheesesteak Sandwiches

Ingredients
- Philly Cheesesteaks:
- 2 tablespoons olive oil divided
- 1 (8oz) package Upton’s Naturals Traditional Seitan, thinly sliced
- 2 large portobello mushroom caps thinly sliced
- 1 green bell pepper thinly sliced
- 1 white or yellow onion thinly sliced
- 2 tablespoons soy sauce
- ½ teaspoon ground black pepper
- ¼ teaspoon sea salt
- 2-4 vegan hoagie rolls
- Easy Cheese Sauce:
- 1 (14.5 ounce) can sliced carrots, drained and rinsed
- ½ cup raw cashews
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon sea salt
- 1 teaspoon lemon juice
- ¾ cup water
Instructions
- Heat 1 tablespoon of olive in a large skillet over medium-high heat. Add the seitan and mushrooms and sauté for 4-6 minutes until the mushrooms have reduced by half in size. Add the green pepper and onion to the skillet with the remaining tablespoon of olive oil. Sauté for 4-6 minutes until the peppers and onion have softened and the onion is translucent.
- Add the soy sauce, pepper, and salt and toss to combine and cook for 2 minutes to caramelize the soy sauce. Set aside.
- Add the carrots, cashews, garlic powder, onion powder, salt, lemon juice, and water to a blender and blend until smooth and creamy.
- Fill hoagie rolls with seitan filling and top with cheese sauce.
