Ingredients
  

  • Philly Cheesesteaks:
  • 2 tablespoons olive oil divided
  • 1 (8oz) package Upton’s Naturals Traditional Seitan, thinly sliced
  • 2 large portobello mushroom caps thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 white or yellow onion thinly sliced
  • 2 tablespoons soy sauce
  • ½ teaspoon ground black pepper
  • ¼ teaspoon sea salt
  • 2-4 vegan hoagie rolls
  • Easy Cheese Sauce:
  • 1 (14.5 ounce) can sliced carrots, drained and rinsed
  • ½ cup raw cashews
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sea salt
  • 1 teaspoon lemon juice
  • ¾ cup water

Instructions
 

  • Heat 1 tablespoon of olive in a large skillet over medium-high heat. Add the seitan and mushrooms and sauté for 4-6 minutes until the mushrooms have reduced by half in size. Add the green pepper and onion to the skillet with the remaining tablespoon of olive oil. Sauté for 4-6 minutes until the peppers and onion have softened and the onion is translucent.
  • Add the soy sauce, pepper, and salt and toss to combine and cook for 2 minutes to caramelize the soy sauce. Set aside.
  • Add the carrots, cashews, garlic powder, onion powder, salt, lemon juice, and water to a blender and blend until smooth and creamy.
  • Fill hoagie rolls with seitan filling and top with cheese sauce.
